Jenna's Hidden Salmon

A meal Jenna threw together, for Mark to bake in their campfire. Ovens work too!

Ingredients:

  • salmon fillet(s)
  • fresh lemon(s)
  • white wine
  • salt
  • pepper
  • dill or parsley optional

Place the salmon, skin side down, in the middle of a sheet of aluminum foil that's large enough to wrap it.
Sprinkle with salt and pepper.

Slice the lemon(s) and lay the slices on top.

Splash wine over top (about half an ounce per person).
Add chopped dill or parsley, if you're using them.

Bury in the glowing coals and ash at the edge of your campfire and cook for approximately 10-15 minutes depending on the size and thickness of the fish and the heat of the fire.

Lemon Squares

Jenna and Mark pick these up at one of the stops along the road.

Ingredients:

Base:

  • 2 cups flour
  • 1/2 cup icing sugar
  • 1 cup butter

 

Combine and press into a 13" x 9" pan. Bake at 350 degrees for 20-25 minutes. Let sit when you make the filling.

Filling:

  • 4 eggs
  • 2 cups white sugar
  • 1/3 cup fresh-squeezed lemon juice
  • 1/4 cup flour
  • 1/2 tsp baking powder
  • icing sugar as desired

 

Put the eggs, sugar and lemon juice in a blender and blend until frothy.

Blend in the flour and baking powder, ensuring they are thoroughly mixed in.

Pour over the crust and bake at 350 degrees for 25 minutes.

Sprinkle the top with icing sugar.
